Food poisoning is often caused by bacteria or viruses that were allowed to contaminate the food. Contamination may be caused by unsanitary practices, improper packaging or incorrect storage methods. There are many types of bacteria and viruses that cause food-related sicknesses. Below are the most common forms.
- Salmonella – is mostly present in undercooked foods such as eggs, chicken, seafood and dairy products. It is one of the most common food-borne illnesses and its symptoms usually include nausea, vomiting, diarrhea and headaches.
- E. coli – comes from raw or undercooked hamburger, unpasteurized milk or juice, contaminated well water, and contaminated produce. E. coli can cause diarrhea, kidney failure and death.
- Listeria – is found in raw milk, meat, poultry, cheese and vegetables. It can be as mild as flu-like symptoms, or it can cause meningitis and septicemia.
- Botulism – symptoms include double vision, blurred vision, drooping eyelids, slurred speech, difficulty swallowing, dry mouth and muscle weakness. Infants with botulism appear lethargic, feed poorly, are constipated, and have a weak cry and poor muscle tone. If untreated, these symptoms may progress to cause paralysis of the arms, legs, trunk and respiratory muscles.
- Norwalk Virus – is one of the most common forms of food poisoning in adults. The virus is an intestinal illness and is spread when people come into contact with stool-contaminated food or water due to unsanitary conditions. It is also spread through shellfish, especially raw oysters.
- Hepatitis A – is an acute liver disease that is contracted by the ingestion of small amounts of fecal matter which may be present in food or drink due to unsanitary conditions. Symptoms include fever, jaundice, loss of appetite and tiredness. Hepatitis A can lead to liver problems and death.
- Rotavirus – causes vomiting, diarrhea and fever. It is commonly passed on through food that has been contaminated with fecal matter.
While some of these diseases do not directly cause death, their secondary complications, such as dehydration, can be fatal. Young children, the elderly, and people who with impaired immune systems are hit hardest by food poisoning.
